apple and cream cheese cake

hello! :)
today i made apple and cream cheese cake. actually i have no plan making this cake, it just popped up in my mind last night because there's a leftover cream-cheese in my fridge and some tart apples. i like it though, the perfect combination of apples and cinnamon, as usual.


however, this is a butter cake. a cake that consists of a lot of butter as it main ingredients and i'm kinda sick with this type of cake since almost all of my cupcakes recipes are butter cakes. i've been loving the chiffon or angel food cake texture lately, they're lighter not like butter cake which are heavier in texture.


fortunately my daddy loves this cake, so does my sister. they said it would taste better if topped with vanilla ice cream or cold whipped cream. i couldn't be more agree with them! it must be more delicious with vanilla ice cream and whipped cream. sadly, i don't have any of them with me..



Apple and Cream Cheese Cake
from 'The Golden Book of Patisserie'


cake
2 cups all purpose flour
1,5 tsp baking powder
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 package (8oz / 250 gr) cream cheese, softened
1/2 cup butter, softened
1 cup sugar
1/2 tsp almond extract
3 large eggs
1/4 cup milk


apple topping
2 large tart apples, peeled, cored, and sliced
2 tbsp freshly squeezed lemon juice
1/2 cup sugar
2 tbsp all purpose flour
1 tsp cinnamon
whipped cream, to serve


directions:
  1. cake: preheat the oven to 350 degree F (180 deg C/ gas mark 4)
  2. butter and flour a 13x9-inch (33 x 23 cm) baking pan.
  3. mix the flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
  4. beat the cream cheese, butter, and sugar with an electric mixer at medium speed until fluffy.
  5. add the eggs, one at a time, beating until just blended after each addition.
  6. with mixer at low speed, gradually beat in the dry ingredients, alternating with the milk.
  7. spoon the batter into the prepared pan.
  8. apple topping: place the apples in a medium bowl and toss with the lemon juice.
  9. mix the sugar, flour, and cinnamon in a small bowl. add the sugar mixture to the apple slices and toss to coat well.
  10. arrange the apple slices over the batter.
  11. bake for 45-55 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  12. serve warm straight from the pan with a dollop of whipped cream.
what happened in my kitchen?
  • i did a miscount. i should have cut all the ingredients half but it's just the cream cheese that i cut down because 125gr cream cheese is all i got. the butter and sugar is still in the same amount as written on the recipe. but as the result of this, i didn't taste any cream cheese in my cake. haha
  • due to problem above, i reduce the amount of flour into 250gr.
  • when all the ingredients for the cake have incorporated, i felt that it's still to thick, so i add another 10ml of milk. voila! the cake came out just right. thanks God!
  • i add 50gr chopped walnut to the topping, just scattered them on the arranged apples.

    Agree with you, it would be a perfect treat with vanilla ice cream topping! Wah, kapan ya gue bisa pinter baking kayak kamu??? *Mikir.com* huahahaha

  2. hihi. iya nih ta, ak tp ga punya ice cream kemaren, jd ga afdol deh rasanya. yaahh, ak dibandingin ma km jg msh jagoan km ta! haha. bento-mu cantiknya pol.. ak ndak isa bikin gtuan. :D
