coconut and mango jelly

hi everyone, i'm posting another simple dessert today..
aah, i am having my exam this week. i am exhausted and really want to fast forward the time to mid-July. i have many plans in the kitchen, i want to make this and that but can't find the time in the middle of these hectic college subjects. thankfully, yesterday i can find a short break time, so i ran to the kitchen, opened my refrigerator and looked for something that i can mess up with. haha. i found agar powder, mangoes, and coconut milk. coincidentally, i have a recipe which needs 3 of them as its main ingredients.


i got this recipe from Dessert Magazine #14. the conclusion i get from this recipe is, sorry to say but to be honest i don't really like it. i don't like mangoes with coconut. i prefer eat them separately, i love them just the way they are :)


i also think the amount of sugar inside isn't right for my taste. not sweet enough. i don't know is it perhaps because i add some water into the mango juice to achieve the exact measurement. just taste them people, you'll find your own taste.  



Coconut Mango Jelly
from Dessert Magazine #14


bottom layer:
1 tbsp agar agar powder
375 ml water
50 gr granulated white sugar
250 ml coconut milk
250 ml mango puree


top layer:
1/2 tbsp agar-agar powder
375 ml water
2 tbsp pandan essence
60 ml mango puree
pinch salt


direction:
  1. make bottom layer first by bringing agar-agar powder, water, sugar and coconut milk slowly to boil in a saucepan, stirring constantly until the sugar has dissolved. remove and set aside to cool. when it has cooled halfway, stir in the mango puree. pour the mixture into a cakepan so that it is no more than 3/4 full. chill in the fridge for 20 minutes until set.
  2. while the bottom layer is chilling, make the top layer by bringing the agar-agar powder, sugar, water, and pandan essence to a boil over medium heat, stirring constantly until agar is dissolved. add the pinch of salt, and mix well. stir in the mango puree.
  3. arrange the mango slices on top of the bottom layer and pour the top layer over. avoid the two layers to delaminate after setting by pouring hot top layer over the cool bottom layer. chill to set for about 40 minutes.
  4. slice, serve chilled.

what happened in my kitchen?
  • i omitted the mango slices and those starfruit slices in the pictures are just a garnish.
  • i only used 2 drops of pandan essence since the coloring is too much and the taste are quite strong. it will be bitter if i put in 2 tbsp.
