coconut biscuits

hello again! this morning, i made coconut biscuits. and just so you know, holiday has finally come! tee-hee!
it's been a week actually, but my auntie came and stay for some days here in my house so i limited my time cooking and baking to accompany her. i've made her indonesian pancakes last Friday but i didn't take any pictures of it, they weren't so perfect either. yesterday, she's back to her crib and i can get my time back in the kitchen.


remember about the list i told you before? coconut biscuit is one of them. i'll make vanilla ice-cream tomorrow though i'm not sure whether i am going to post it or not. you know, i really miss being around in the kitchen and cook something, as a result of that i keep adding more and more things into my 'going to make' list. i do want to fulfill all of them, i hope i'll have enough time to do it all this month.


this coconut biscuits called for simple and not much ingredients. it used desiccated coconut and i still have one large jar half-fulled with it. the recipe also called for powdered sugar and i tried making powdered sugar by whizzing granulated sugar, it works! the granulated sugar become so smooth and whiter. another thing i found this morning is i just noticed that when you want to make biscuits or cookies, the quality of butter you used really affecting the taste of your baked-goodies. thankfully this time i bought a quality over quantity butter, so that my biscuits taste real good! rich and satisfying.. :)



Coconut Biscuits
modified from 'Kue Kering Cokelat'

200 gr butter
130 gr icing sugar
2 egg yolks
100 gr desiccated coconut, whizzed
300 gr low-protein flour

direction:
  1. grease a large baking sheet or lined with parchment paper. cream butter and sugar in a large bowl until pale and fluffy. beat in the egg yolks then add the desiccated coconut. add the flour to make a dough. covered with plastic-wrap and refrigerated for about 1/2 to 1 hour. 
  2. preheat the oven to 160 degree C. take out the dough from the fridge. roll it over a lightly floured surface into 5mm thick (you can divide the dough into 3 to make it easier), cut with cookie cutter. spread them out on the baking sheet.
  3. bake in the preheated oven for about 15 minutes or until it become light golden brown.

what happened in my kitchen?
  • i can't make my desiccated coconut to be so fluffy, it still quite rough but it's okay though.

  2. Kalo liburan emang paling asyek uprek2 dapur ya Mon? :D. Udah nyoba masak ini pasti pengen nyoba bikin yang itu, hehehe. Makanya kalo liburan nih, keseringan BB nambah wkwkwkwk. Biskuit kelapa, kira2 ini sama dengan yang namanya sagon gak mon? Btw, futune apik Mon :D
